An incredibly easy side to make with any dish. Tangy and totally tasty, this Broccoli Rabe recipe is as healthy as it gets.
Ingredients:
1 pound broccoli rabe (rapini), cut into 3-inch pieces
1/2 cup dry white wine
1/2 cup fat-free, low-sodium chicken broth
3 tablespoons fresh lemon juice
1 teaspoon butter
2 tablespoons chopped fresh parsley
2 tablespoons capers, rinsed and drained
Directions:
1. Cut up broccoli rabe and set aside.
2. Add wine, broth, juice and butter to a pan and heat to boil.
3. Stir in broccoli rabe. Cover and cook 3 minutes or until tender.
4. Stir in chopped parsley and capers.
