I first tried this recipe when assisting my friend Katherine in preparing “breakfast for dinner” for some of our friends. We were both a little skeptical about it when looking at the ingredients, but thought it was worth a shot. It turned out amazingly well and it was everyone’s favorite – I’m pretty sure we all went back for seconds. This week I wanted to make it again to share with my lovely readers! It truly is one of the easiest recipes to make and tastes utterly delicious. Enjoy!
Ingredients
6 eggs, beaten
3/4 cup onion, chopped
1/4 cup all-purpose flour
1 (10 ounce) package frozen chopped spinach, thawed and drained
1 (16 ounce) package small curd cottage cheese
1 (16 ounce) package shredded Cheddar cheese
1/2 cup butter, melted
Salt and pepper to taste
Directions
Beat the eggs in a mixing bowl with the onion and flour until the flour is no longer lumpy.
Stir in the spinach, cottage cheese, Cheddar cheese, butter, salt, and pepper until evenly combined.
Pour into a greased 9×13 inch baking dish and bake for 45 minutes or until the casserole is bubbly and the top is golden brown
And voilĂ ! An easy-as-pie egg casserole that everyone will enjoy… and for boys who might be hesitant to try it, you can barely taste the spinach!
