





I don’t know about you, but I’m a BIG fan of hearts of palm. They are so delicious, light and pack a big punch of flavor! This easy salad is a great stand alone meal for a light lunch, makes a fresh side dish at dinner, and is also awesome to throw over your favorite greens for some variety throughout the week.

3-4 medium to large tomatoes
1 14.4 oz jar of hearts of palm (drained, cut into round slices)
1 semi-ripe avocado (not too soft or it will get mushy when mixing the salad!)
Olive Oil
Salt
Pepper

1. Dice your tomatoes, hearts of palm and avocado into bite-sized pieces.
2. Toss together with a touch of olive oil.
3. Sprinkle with a generous helping of salt and pepper to bring out the various flavors.
4. Serve!

I love hearts of palm! I rarely see them being used in the U.S. though, glad you shared this! Can’t wait to give it a try.
