For some reason, what should be a slow season (summer) has turned into the busiest for me! Lots of projects and collaborations for the blog, teamed up with several upcoming trips, have been making my schedule tighter than ever! I also have been cooking a lot more at home in an effort to eat healthier foods, which as I’m sure many of you know, can take up a lot of time.

I recently picked up It’s All Easy and It’s All Good, both by Gwyneth Paltrow and started testing out a few recipes yesterday! For lunch I made the zucchini noodles with spinach pesto and for dinner I cooked up the cauliflower and kimchi fried rice! Both are so yummy and will be making another appearance as leftovers today. I’ve also been told I need to pick up My Father’s Daughter by several readers via SnapChat – needless to say, there are a TON of amazing recipes that are both creative and delicious.
